Spezie Golose: How I Created My Own Gin from Scratch (And You Can Too)

Tragones y tragonesas! (Foodies of all kinds!) Have you ever dreamed of creating your own gin? And I don’t mean mixing gin and tonic during a night out—I’m talking about choosing aromas, selecting spices, distilling, and bottling a recipe that’s 100% yours, unique, and damn delicious. That’s exactly what I did at a gin workshop led by the amazing Oscar Becerra, mixologist at Fat Charlie, one of the coolest bars in Guadalajara.

The experience kicked off with a bit of history and theory—nothing too heavy, don’t worry—to understand what makes a good gin. Then came the fun part: a table full of jars with more than 30 different ingredients. From the classics like juniper, cardamom, and lavender to bolder ones like clove, pink pepper, and grapefruit peel. That’s when my foodie instincts kicked in.

I decided to create a spiced gin with a smoky finish, perfect for pairing with grilled meats. I named my creation Spezie Golose (yeah, it’s Italian—because I’m fancy like that). I added juniper, clove, ginger, star anise, a touch of grapefruit, and the key ingredient: smoked mesquite wood. The result? A warm, aromatic gin with a slightly sweet profile and lots of character.

After mixing, macerating, and distilling, everyone got to take home a personalized bottle with their unique recipe. Spezie Golose is now part of my personal bar and honestly, it turned out so good I felt like a real mixologist (or at least a stylish drunk).
